Gyoza is Japanese for Chinese pan-fried dumplings, tantanmen is Japanese for dan dan mian or Sichuan spicy noodles and mapodofu is Sichuan mapodofu (Pockmarked Grandmother's Tofu or however people call it)! Japanese people love Chinese food and in Harumi's Japanese Home Cooking, she actually has a recipe for mapodofu but doesn't even say it's from Sichuan...Now I'm going to read the rest of your Japan posts!
