Gyoza is Japanese for Chinese pan-fried dumplings, tantanmen is Japanese for dan dan mian or Sichuan spicy noodles and mapodofu is Sichuan mapodofu (Pockmarked Grandmother&#039;s Tofu or however people call it)! Japanese people love Chinese food and in Harumi&#039;s Japanese Home Cooking, she actually has a recipe for mapodofu but doesn&#039;t even say it&#039;s from Sichuan...Now I&#039;m going to read the rest of your Japan posts!
