Didn’t realise he had eight of these brasseries. Love the look of that souffle. Wish you’d ordered the Flaming Alaska – I haven’t seen one in action in awhile! (Not since the eighties)

I like the pear with the cheese souffle. Kind of like a fruit and cheese platter, but more elaborate.
