[Organic beetroot dip]

I’m on a bit of a beetroot crusade this week… please bear with me!

As promised, here’s my second dish with the delectable organic beetroot I received in my weekly box. It’s super simple and fantastic served with raw or lightly blanched vegetables as a healthy snack or starter.

I’ve also used it to accompany a nice piece of grilled salmon or dolloped with abandon on a potato salad - the contrast of colours is amazing!

I think it’s really important to eat not only a wide variety of foods but also all the colours of the rainbow. My favourite colours are red and pink so this dip brings me a double whammy of nutrients and pure aesthetic joy.

Although the clean up of the food processor is a little bit of a struggle, it’s totally worth it for the vibrant colour and creamy texture.

Organic beetroot dip
makes about 1 cup

4 fresh organic beetroot
2 tablespoons balsamic vinegar
1 teaspoon cumin seeds, crushed
1/4 cup Greek style plain yoghurt
1/2 lemon, juiced
sea salt and pepper to taste

Roast the beetroot as in yesterday’s recipe.

Add all ingredients into a food processor or blender and process until smooth, but not watery.

Serve with raw or lightly blanched vegetables and toasted pita bread.

    Okay I HAVE to make this. Between my love for my yoghurt maker and my obsession with roast beets and a vague notion that colourful foods are good for me, I think this could be perfect. Certainly looks fabulous :)

    For all of us that don’t have yoghurt makers - it works beautifully with store bought Greek style yoghurt! ;)

    I use beetroot in my home made hummus when I don’t have any tahini. Be careful if your wearing a white shirt ;-)

    Normally this dish would have two major strikes against it in this house. Strange veggie (by strange I mean anything not peas, carrots and celery) and pink. (I have five sons who think anything pink will turn them into girls which is obviously the worst thing that could ever happen to anyone, right?) I do think, though, that I could pull this off. First, it’s a dip. Second, it’s made of beets. I got them to eat an entire bowl of roasted beets once by telling them if they ate a sufficient amount they would pee pink. (Somehow if you pee pink it doesn’t make you a girl…)

    I’m going to hop over to the farm market to try this. It’s so yummy looking!

    Thanks so much for this story, haha pink pee, love it! I have a lot to look forward to trying to get children to eat my food… still a few years yet!

    I think you’re doing fantastically getting your boys to eat peas and celery - I hear kids are a bit adverse to ‘green’ stuff. And five of them too - you’re a saint!

    Let me know if the boys eat the dip!
