Australia Day Mini Jelly Pavlovas!16

Australia Day is a time to relax and enjoy the public holiday, so if you’re going to the trouble of making a sweet treat, it may as well be super easy!

Not to mention the temperature is expected to be around 35C in Sydney – HOT! That’s no weather to be slaving in the kitchen.

Simply mix and chill the jelly in layers then dump a bought meringue on top, dollop on whipped cream and fresh fruit and voila! You have got a patriotic green and gold dessert that looks cute as pie and is fun to eat for kids and adults alike.

Hope you have a great Australia Day whether you are at home or abroad or not even Australian at all!

Mini Jelly Pavlova Recipe

makes 6

1 x 85g packet lime jelly (I used Aeroplane Jelly)
1 x 85g packet lemon jelly
6 mini meringue twirls (available at supermarkets or make your own)
whipped cream and fresh fruit to garnish

1. Make the lime jelly as per packet instructions and pour evenly into six glasses. Place in the fridge and leave for 2 hours or until set enough to pour the second lot of jelly on top.

2. Make the lemon jelly as per packet instructions and pour evenly on top of the green jelly in each of the glasses. Place back in the fridge for 4 hours or until set.

3. Place a mini meringue twirl on top of each glass, top with whipped cream and your favourite fruit and serve.
