Hi Melanie,
So glad you enjoyed it! It is much richer with cream, so hope you try it again :)
Yes, steam is key for perfect rice! Fingers crossed you can get it perfect every time now.

This recipe as awesome!! I didnt have cream so I had to use milk and it was still good, so I can't wait to try it with cream!

Also thanks for the trick with the rice, I always wondered why my rice came out so soggy! It's all about the steam!

Hi Tigerfish,
Cheers!
ps. Your presentation of dishes is fantastic!

Hi Daphne,
Another Aussie - hurray! I really love this dish with cream, but thick Greek yoghurt also works a treat.

Hi Kim,
Thank you! Give it a go with Greek yoghurt, it works really well and is lots healthier!

Hi Tangobaby,
I'm soooo glad the rice worked for you! It's really nerve-wracking to put up a 'never fail' recipe like that and hope that it actually works for everyone... You don't need to convince me about cream. I agree it almost certainly adds a bit of heaven to practically any dish :)

I made a modified version of the chicken (lots of garlic, some bay leaves but no ginger) and did the rice trick. The rice turned out perfectly! And the rest was nice too...it's amazing what happens when you add cream (I added butter, too) to something.

Your love of rice reminded me of something I used to make often (and should again...I had forgotten about it).

I took a Persian cooking class years ago and we learned how to make basmati rice but with a crispy portion called tadig. It's very simple and basically the bottom of the rice gets crispy and golden and it sounds really boring but really it's the best thing you've ever eaten.

I'd try to describe how to make it but I found a recipe that might be safer:

It's really delicious and something any rice lover should try.

Hi Kevin,
My rice cooker died a few years ago and I haven't replaced it yet, hence my trusty saucepan method. You've made me want to get another one now... maybe I will ;)

Hi Fearless Kitchen,
Most definitely, I have made it with yoghurt many times. Personally I prefer thick Greek style yoghurt, but you could use plain natural yoghurt too - just make sure it is plain (not vanilla flavoured!).

Let me know how you get on!

This looks really good. I do have a question for you, though: how do you think this would work if yogurt were substituted for the cream? We rarely keep cream around the house, unless I'm on a huge ice cream kick. We almost always have yogurt.
