One of my favourite blogs, A Fresh Legacy, has a regular feature called Fresh and Fast Friday where she posts a recipe that is healthy and quick to make at the end of a long week.

We all need a bit of inspiration on a Friday night so that we don’t reach for the phone to dial takeaway (or is that just me?).

Each week on Friday, starting today, I am going to post some quick and easy meals you can whip up without too much hassle or special ingredients. They will be from the Fig & Cherry archives and occasionally borrowed from a blogger friend or two.

So you’ll get some inspiration for dinner, check out some older recipes you may have missed here on the blog AND discover new yummy blogs. It’s win-win-win!

Let’s get into it…

Idea #1 Saucy chicken and chorizo israeli couscous. It’s a one-pot wonder meal! 

Idea #2 Greek Lamb Skewers with Feta and Olive Dip. Fire up the BBQ and throw together a salad – dinner is served!

Idea #3 Roasted broccoli frittata. Only a few ingredients, but oh-so-much-flavour!

  • What a fantastic idea. I’m always searching for fresh inspiration for Friday night / weekend meals, so this is really handy!

  • Sometimes a quick and easy is all you want on a Friday. A lot of the time we resort to just eating out, but it is nice to kick back at home. Will definitely have to keep an eye out on A Frsh Legacy :)

  • Great idea, you don’t want to go to much effort on a Friday night…. Unless its doing your makeup to go out to a great restaurant!
