
Last week I started a new weekly feature called Friday Night Dinner Ideas.
I’ve been thinking about it all week. About how to make it even better than a bunch of random meal links. And I came up with a solution – add a theme! Isn’t a theme a fantastic fix for so many things in life?
This week it’s pesto. There’s a few ideas from me and some from my blogging friends. Feel free to play along by leaving your pesto-themed meal links in the comments!
Idea #1 above: Roasted beetroot with vegan coriander pesto. This is lovely served on top of roasted Portobello mushrooms or as a side to grilled chicken or fish.

Idea #2: Pepper crust beef fillets with pesto veggie skewers. Get hubby to fire up the BBQ while you throw together these easy skewers. Team work!

Idea #3: Asparagus and edamame soup with rocket pesto from the fabulous blog: My Darling Lemon Thyme. If you have not checked out Emma’s gorgeous and healthy recipes, then today is the day!

Idea #4: Spaghetti Al Pesto from the wonderfully creative and talented Sneh at Cook Republic. Bonus recipe: If you are looking for a quick dip to rustle up with drinks before dinner then you must try her peanut and yoghurt pesto – it is absolutely divine!
