
[Chocolate and ANZAC ice cream sandwiches]
Thank you to everyone who played along with my chocolate dilemma. You all well and truly ignited my creativity and I’ve had the difficult task of choosing what to make! Without further ado, here’s my first solution.
Some of your comments mentioned biscuits, ice cream and peanut butter among other delicious things, which made me immediately think of this combo. I went to the shops to search for ginger snaps but a a packet of ANZAC biscuits caught my eye and there was no turning back.
The Bear absolutely loves ANZAC biscuits. I’ve made them for him many times, but he says they’re never as good as the ones his Mum makes. He remembers coming home from school to a freshly baked batch - she’s a talented lady that Mama Bear.
For those of you who don’t know what ANZAC biscuits are, you can read about them here. They’re made of rolled oats, dessicated coconut, golden syrup and butter. In my humble opinion, they’re the best ‘bread’ for these sandwiches, but feel free to substitute other biscuits and chocolate spread if you don’t have access to the Nestle product (maybe try Nutella).
But don’t think I’ve finished with this product yet! I loved the comments about ricotta and choux pastry, so expect more chocolate recipes in the very near future - it’s a 3 part series at the very least!

Chocolate and ANZAC ice cream sandwiches
I’m not going to provide amounts because it depends on how thick you like it! This is just a guide - please experiment to your heart’s content - the possibilities are endless.
ANZAC biscuits
Nestle Top n Fill Chocolate Flavour
Smooth peanut butter
Vanilla ice cream
Spread chocolate onto the back of one biscuit. Top with a dollop of peanut butter and a scoop of ice cream. Place another biscuit on top and sandwich together.
Leave to stand for 3-5 minutes to allow the ice cream to melt slightly. Repeat as many times as desired.
Serve one or two per person.

I don’t think I’ve heard of anzac! But these look so melty, yummy, sinful and delicious. They really are a site, just beautiful. Thanks for taking us on you adventure.

Christie, that looks so wrong it must be right! I have to admit, my immediate reaction to your chocolate dilemma was to suggest that you chuck the darn tins out, but it looks like you’re putting them to very good use so it’s just as well I kept my trap shut!

I’d never heard of anzac biscuits until now :). Wow, what a yummy ice cream sandwich! Sounds like a chocolate lover’s dessert, for sure :D.

I was having the exact same dilemma as you were having with the Top’n'Fill which is how I came across your site!
I’ve been looking for recipes to use with this and havent managed to find many. I have posted 2 nice ones I’ve found but havent tried as yet.
I plan to make the muffins tomorrow so I will let you know how they turn out if you like!
