
If you’re a regular reader of this blog then you know I am a HUGE mushroom fan. So when I put the question out on Facebook as to what you would like for this week’s Friday Night Dinner Ideas post, I was absolutely delighted with your choie of mushrooms!
I don’t even need to find any blogger pals to link to this week – my archives have so many juicy mushroom dishes! Here are seven of my favourites.
Idea #1: Quick mushroom stir fry. This is Thai inspired and will be on the table in 15 minutes flat.

Idea #2: Mushroom strudel recipe. Looks fancy but is dead easy and feeds a crowd!
Idea #3: Mushroom and parsnip soup recipe. This is a slow cooker recipe, but can be made on the stove top too.
Idea #4: Mushroom and goats fetta quiche recipe. A little bit fiddly, but they freeze well!
Idea #5: Shiitake Okonomiyaki (Japanese pancake). If you can get hold of fresh shiitakes they make all the difference!
Idea #6: Mushroom breakfast burrito. Leave out the egg if that is too weird for you for dinner. Otherwise, enjoy the ease of breakfast cooking – at dinner time!

Idea #7: Salt and pepper tofu recipe. I served this for breakfast on toast but it would also be awesome over rice or noodles.
