Dinner Ideas {with pumpkin!}6

Dinner Ideas is a weekly round up on Fridays of quick and healthy meals to inspire you to cook well after a long week. Recipes are from the Fig & Cherry archives (simply click the blue text to go through to the recipe), as well as a few of my favourite blogs. This week’s theme is cheese. Enjoy!

Idea #1: Baked pumpkin cannelloni. Make a double batch because it freezes really well and what could be easier on a Friday night (or any night for that matter) than simply defrosting dinner. Fantastic!

Idea #2: Rosemary lamb chops with pumpkin mash. Simplicity at its best. Meat and veg. Love.

Idea #3: Garam masala roast beef and spiced pumpkin wedges. Meat and veg again, but in a completely different flavour-sphere. You don’t even need the roast beef, just eat the pumpkin on its own. It’s that good.

Idea #4: Pumpkin, chorizo and chickpea soup. My favourite soup of all time, ’nuff said!

Idea #5: Pumpkin, cinnamon and date muffins. Something sweet for afters?

  • Oooo, I like the sound of the pumpkin & chorizo soup…but I HATE chopping up pumpkins, makes my poor old arms feel like they’re going to drop off.

  • I *adore* pumpkin and love it in a myriad of ways: in vegie lasgane, in curries, stir fries, salad.. and I’ve recently become a bit passionate about adding it to baked goods.
    All your ideas are making me hungry :)

  • Ooh great post! I love pumpkin but sometimes find it hard to go past just baking it as a side dish and need to be a little more creative with it.. While we’re on the subject, I’m reminded that it’s been a looong time since I’ve made a pumpkin pie.. :)

  • Pumpkin is up there as one of my fav vegies of all time. So versatile and can be used in sweets or savoury! I agree with Amanda…the soup looks scrumptious!
