Sweet Treats

Plenty of indulgent blow outs and healthy everyday treats to keep you on track.

I try my best to make desserts as healthy as possible so that they can be enjoyed more often without sacrificing texture or flavour. I have been experimenting a lot with vegan desserts so there are plenty of those.

Layered banana split, and a little NYE drama

New Year’s Eve was eventful for us. But not in the way you’d expect.

We spent the evening at Lismore Base Hospital emergency department as Poppy had a febrile convulsion at around 3.30pm and scared the living daylights out of us.

My sister used to have them when she was younger so I knew to immediately get Poppy into a tepid bath to cool her down and get her comfy on her side in the foetal position. Hubby called the ambulance and we waited the longest 10 minutes of our lives. So, so scary.

I know my red coconut flakes look a little orange, but hey, I used natural food colourings and they weren’t as vibrant. Better than all the nasty chemicals in the colourful ones. (more…)

The festive treats continue! Last week it was gingerbread biscuits, yesterday was healthy white christmas and today…

Mascarpone stuffed strawberries. Yum!

These are really simple and work both as a pre-dinner treat with champagne or a light dessert after-a-big-meal, you know, like the one coming up next week. (more…)

Healthier White Christmas Slice

White Christmas is a real festive indulgence.

For me personally, it’s far too sweet. But I’m always saying things are too sweet that most people think aren’t. Like cupcakes and macarons and fudge.

I know, I know, I’m weird!

Anyway, back to the slice. This version is healthier because it’s completely dairy-free and vegan… and still tastes great! Promise. (more…)
