I’ve been very naughty as I’m late to post my potato recipe for the Potato Ho Down I hosted this month. I’ve just been so busy planning for my business trip to London and then actually taking the 24 hour flight that I’ve let it slip by. Sorry Cathy!

I’m excited to share this recipe with you because it uses my very best friend’s best-ever-in-the-world chilli jam. Ju’eta and her talented chef husband Mario make the most wonderful condiments and in my opinion their chilli jam is to-die-for. (more…)

Smoked salmon crepe ‘sushi’

The idea for these little rolls came to me in a daydream… well actually a ‘falling off to sleep’ dream.

I was trying to think of a dish to include in the Aussie BBQ Bonanza that combined two different countries when I remembered some smoked salmon crepes I’d made.

The original included chives in the centre but to make them even more ‘sushi-like’ I added a sheet of roasted seaweed this time.

It adds a unique umami flavour and chewy texture without overpowering the salmon. (more…)

Mini caprese salads

I feel a bit silly providing a recipe for these but they’re just so adorable that I had to share them. Don’t you agree?

I’d already decided on the tabbouli and potato salad for the BBQ when I remembered the gorgeous combination of Caprese salad.

My brain immediately started ticking over and this canape kind of popped right into my thoughts. I love it when that happens!

The best thing is that you get just the right amount of each flavour and there’s no fighting over the last basil leaf on the plate. (more…)
