Turkey, prawn and mango salad: making leftovers posh!

This dish is to support National Leftovers Day 2009 and uses ingredients from our hybrid Aussie-British Christmas dinner. I love the way it’s uniquely Australian due to the addition of fresh prawns and sweet mango flesh.

Apparently Australians spend an estimated $7.6 billion on food in December, which is a huge amount, especially as a lot of it is wasted.

Unused food that goes into landfill produces methane as it rots which is very harmful to our environment and contributes to climate change, a phrase which you’ve probably heard quite a lot recently.

Sorry to get all hot and heavy on you the day after Xmas, but I think it’s a really important cause. Re-using, re-cycling and portion controlling our food is something we should be thinking about all year long. (more…)

More salad!

I’m back on track with healthy eating while in France. It’s for two reasons:

  1. I’ve overindulged for about 4 months while travelling around the world. You read this blog, so you know what I’m talking about. Plus, I haven’t even posted all the super indulgent ones yet, it’s just too embarrassing revealing all the food I’ve eaten!
  2. I’m heading to NYC next week, then San Francisco, LA and Vegas and, quite frankly, I’m scared of the huge American portion sizes I’ve read about and seen on food blogs! (more…)

Harissa baked eggplant

It’s been a bit of a meat-fest around here lately so let’s lighten it up, reduce our carbon footprint and save a few bucks as well.

I came up with this dish just before we left Barcelona in anticipation of heading to Morocco. I got us in the mood with a good dollop of fiery harissa in a vegan meal that tastes suspiciously meaty thanks to those gorgeous specimens nicknamed ‘meat-for-vegetarians’: mushrooms. (more…)

Hello friends, family and all my internet pals,

I’m currently in Fes, Morocco. Yesterday we went to the Medina (a massive market) for the first time and it was absolutely amazing. Such a shock to the senses – smells (spices, incense, animal poop), sounds (musical instruments, Arabic, French) and sites (so many donkeys!).

Lots of amazing pics to follow, but for now, a recipe I created for Morning Copy‘s client Butcherman. A simple and delicious flavour combination for busy people mid-week. (more…)

Rise and shine it’s breakfast time!

I’m a big fan of simple and nutritious breakfasts. If you eat a healthy breakfast then you’re more likely to continue making healthy choices for the rest of the day. Well that’s true for me anyway.

I’m what people call ‘a morning person’ – read: super perky to the point of annoyance. Actually, that’s me most of the time, but especially at sunrise.

So preparing a breakfast dish that takes a bit of time is fine with me but I realise for most people that’s not an option. They’d rather roll over and sleep some more and settle for a takeaway coffee and a sweet pastry or bacon ‘n egg McMuffin (please don’t do it!). (more…)
