Christmas cake brownies

Just when you thought all the brownie flavours were played out… bam! I present you with christmas cake brownies. Chocolatey squares that are delightfully supercharged with dried fruit, spices and blanched almonds.

Two beautiful desserts come together here in one festive treat that is so versatile. Serve in small squares with coffee or tea, plate up with custard as dessert, sneak a bit from the fridge between meals, or maybe for breakfast – hey, it’s the holidays, live a little!  (more…)

Rolled turkey breast with cranberry couscous stuffing

Have you ever tried to debone and flatten out a turkey breast? It’s quite an ordeal.

Do you know what’s a better idea? Make good friends with your butcher and ask that lovely man (or woman) to do it for you. Let those experts with their super sharp knives help you out. Work smarter, not harder people! That’s what I did.

So I’m going to go ahead and give a big public shoutout to Ashley and the team at Quality Meats Alstonville for their hard work on my lovely bird. Gobble gobble. They deboned the breast and flattened it out with a big meat mallet so that all I had to do was lay her on my kitchen bench and stuff and roll her.

Minds out of the gutter please readers! This is still a turkey we are talking about! (more…)

Dairy free eggnog {chilled version}

The best thing I have to say about this drink is… it got my daughter to eat eggs again! Without even knowing it {insert evil laugh here}.

Getting her to eat any animal-based protein has been a challenge. She’ll either try it once or eat it for a short time before never touching it again (despite repeat offerings). It’s frustrating, to say the least. Hence why I have resorted to cookies filled with chickpeas. More on that another day.

One thing she does love though, is a good milkshake. Especially one with a frothy top, babycino style. So when she saw me whizzing up this concoction she eyed it off until I let her try some. Which I very happily did and then sat there grinning from ear to ear like a stupid cheshire cat knowing that she had just eaten an egg. Raw, mind you, but still! (more…)

{Keeping It Real} The muesli edition

For the last five Mondays I have posted five divine avocado breakfast recipes that I was commissioned to create.

They may have fooled you into thinking I eat beautifully styled food every day.

Sadly, I do not.

Today I’m here to set the breakfast record straight. I’d like to start sharing some Keeping It Real posts on a casual basis (read: sporadic) so that it doesn’t look like I live in food styling lala land. Believe me, I don’t.

I eat way more slapped together meals than I care to admit to. I’m a mum of two young kids, that is just life.

Proscuitto wrapped avocado with balsamic & thyme (properly) roasted tomatoes

I’m a bit of a roasted tomato snob. OK, a lot of a snob.

I believe if tomatoes are advertised as roasted they should be properly collapsing and luscious. If not, then cafes should not bother serving them. There’s nothing worse than reading ‘slow roasted tomatoes’ on a menu and then looking down at your plate to see half a pale orange/red fruit that’s seared on the cut side and completely hard throughout.
