It’s the middle of March already – wow. This year is flying by!

Well, a new month means a new In My Kitchen post to share goodies I have been sent. Now, I have to admit that I have been sent quite a few things recently, but I only like sharing things I genuinely loved so only two gifted products have made the cut. Ouch, harsh Christie!

First up is my favourite quick lunch (that isn’t a sandwich). It’s a cold pasta salad made with fresh tomatoes, tinned tuna in olive oil, chives (or spring onion), olives, goats cheese (or fetta) and lemon juice. Delicious! (more…)

Homemade fig, vanilla and lemon jam

After yesterday’s heavy post, I thought I’d get back on your sweet side with some homemade jam. Did it work?

My very good friends Robyn and Rocco gifted me with about 3kg of figs from their tree last month. Tiny, sweet, gorgeous things. I was ecstatic until I realised I couldn’t actually eat that many figs before they were going to turn.

What was I to do? That’s right, make jam. But I also stuffed them into biscuits, brownies (so good! Use this recipe and just chuck in a cup of chopped fresh figs with the nuts in step 4), plus I ate them on muesli everyday.

And I STILL had about a kilo left over. Jam, was their destiny. (more…)

You are going to learn a few new things about me today. I suggest you go and grab a cup of tea, cos this might take a few minutes.

As you know, I don’t often share deeply personal things on this blog, it is mostly just pretty food and occasional baby pics. But that is going to change, and I hope you are OK with that.

My life has changed dramatically in the last 12 months and I haven’t shared any of it here. For my blog friends and readers all over the globe, I’m sorry for that – because after all, that’s what blogging is all about. Sharing.

I have just been conscious about keeping this a ‘food blog’, but it’s now going to evolve into more of blog about my family and life on the northern rivers. Don’t worry, there will still be food, lots of it, so don’t click away just yet. (more…)

No-cook pasta salad sauce

The weather is still hot here in the northern rivers, even though it’s almost Autumn, so cool dinners are a welcome respite at the end of the day. Even better when they are practically no-cook.

This sauce is designed to be quick and easy but still full of the best flavours of Summer. Stir it into cooked and cooled pasta for an instant salad or stir through hot pasta for dinner in a flash. Mums, it’s a winner. (more…)
